Vietnamese Spring Rolls for the whole class !

So last year, we had a micro teaching class (well we have it almost every year haha but last year was more specific on lesson plan). I have been dying to upload our activities in my classes and found this one photo of our activity last year. If and only I am as determined as those people on Pinterest, I surely have a lot to share !

We focused on the topic 'How To Write a Process & Procedure Essay' last time... and what we did was, we actually brought the real ingredients to the class and taught them on how to make Vietnamese Spring Rolls live.

I don't wanna bore you with the hum drum part of how we conducted the lesson but here goes, our own recipe of the rolls and ah yes, I made our own signature sauce .




Ingredients for one roll ( frankly, you can just put the amount of the ingredients up to your liking. Sorry la. Saya melayu. Main agak je haha. Takda measurement) :

Vermicelli Noodles (hydrated/boiled until el dente)
Leaves Lettuce (1 or 2 leaves per rolls)
Mint ( no need to chop. Put a few leaves )
Sliced Carrots (1.5 tbspoon)
Chopped Coriander/Cilantro (2 teaspoons)
Chopped Basil (2 teaspoons)
Boiled Prawns (3 or 2 slices per rolls)
A few Rice Paper
1 or 2 dollops of Aioli (Can buy from the stores but we made our own. I will share below just in case) - aioli will act like a jam, so if you would like to have more savory taste in your rolls, you may put extra aioli :)

OR
Into 2 tbspoon of mayonnaise , put these :  a garlic clove ( finely chopped), sprinkle some salt and grounded black pepper, and squeeze a lime juice and sprinkle some of the mint


Steps for Rolls:

  1. Boiled your prawns (with shells on) on the stove until its is cooked. Do not throw away the prawn water as we can use it later. 
  2. Slice the prawn into half , then you can peel of the shell and the dirt. 
  3. Wash your greens and start preparing a bowl of warm water. 
  4. With your warm water ready, dip the rice paper into it for 1 second and gently lay it on a flat surface. 
  5. In a row across the centre, put down your sliced prawns first, followed by lettuce and hydrated vermicelli noodles on top of the rice paper.  
  6. Spread a dollop of aioli, place the mint, carrot and cilantro.
  7. Fold the corners (the two sides) inwards and roll from the bottom over the ingredients. Make sure to be super gentle as you don't want to break the rice paper. 
  8. Repeat with the remaining ingredients.

Well , some people like to have the rolls with the peanut butter sauce but I don't really like peanut butter haha so here's another way to make the sauce ...


Ingredients for dipping sauce :

1 cup of boiled prawn-water from before
3 teaspoons of fish sauce (my ultimate secret ingredient haha)
2 cloves of minced garlic
2 spoon of sugar
5 nicely chopped chilli
2 lime
Salt (accordingly)

Steps for sauce

  1. Reheat your prawn water on the stove and add the sugar. 
  2. Pour the garlic , chilli and the fish sauce. 
  3. Add sugar according to the taste. 
  4. You may want to add some finely chopped shallot but it is not obligated to. 
  5. Turn off the fire and squeeze your limes.
  6. There is no harm in modifying the sauce according to your taste :)


Okay I guess that's all for the time being. Will try my best to post more recipes but knowing my inability to write down specific amount of ingredients, I don't think I'll be able to do so quite often 😂😂😂 This is why you don't ask a Malay girl about recipe. We like to 'agak-agak je' haha

Rant and Mac & Cheese

So many things on mind and yet so little time to blog. The oven is doing its job, so I thought I could come in here and write while waiting.

I had so many to-do-list specifically for my sem break and not even half of it were done. Some of the RIP plans were taking bike license and enrol myself into cooking class. The license was just, , , let's say, impossible. People said that you gotta at least know how to control the bike first before going to the classes. Lol. Is that so ? Cause if yes, Anis here would take more than 3 months just to finish the classes.

On another note, as I had manage to conduct a few English tuition classes for the past few weeks, I have collected quite a number of money; which is now left to RM 0. *cry a bucket*. 

I have used half of it to pay for our mini Perhentian Trip and the other half to buy cooking ingredients. Haha. Though my parents would leave some money before going to work, I prefer not to take them and leave them there. Might use it once I really need money.
I couldnt help but feeling a little bit mature doing this hahahaa.

So this evening, I made some Mac and Cheese. Super easy I tell you !  Because instead of making my own carbonara sauce, I bought the canned one from Prego. Lol. Haha. Only RM4 meh.



Ingredients :


  • Boiled Macaroni (1 cup and half)
  • Sliced Onion : 1 bulb  or you can use 2 Shallots instead
  • Sliced Capsicum : Half
  • Butter : 2 spoons
  • Fried Minced beef/meatballs 
  • Button Mushroom : Up to you :P
  • Prego Carbonara : 1 Can
  • Pepper : Accordingly
  • Paprika : Accordingly
  • Salt : Accordingly
  • A cup of fresh milk (not compulsory) 
  • Toppings : Parmesan (a cup) , Capsicum (half), Nicely minced and chopped Garlic (2 cloves)



How to :


  1. Saute minced Onion/Shallots with the butter. Once the smell rises, add the capsicum. Again, saute well. 
  2. Add the carbonara, the macaroni and then the already fried meatballs. Fold them in. 
  3. Add a few pinches of salt, pepper and paprika. 
  4. Pour a cup of fresh milk and stir them before adding the mushroom. Let it rest.
  5. In another pan, spread the aluminum foil and layer it (foil) with some margarine/butter
  6. Pour the mixture into the foil and sprinkle A LOT of cheese on top. If you don't want the cheese to be overwhelming, sprinkle the chopped garlic, pepper and paprika too. 
  7. Bake into the oven for 45 ++ minutes or until the cheese melts.




Super easy right ? 
I feel so bad because it had been ages since I'm able to post any recipes at all. I had this little dream inside me to have well-balanced posts from each label   T_T     guess I'm still far to go.

No-bake Moist Chocolate Cake

Couldn't really post recipes like I promised cause let's be honest here... Who'd bring their phones to the kitchen :P .  With the ingredients on the counter, and phone. Messy . I don't know. It's kinda weird, isn't it ? 

Okay.
Since it's like that, I will try my best to post only the SIMPLEST recipe, which won't be needing any step-by-step photos or video :)

And the easiest cake to make (I think) , is the no-bake moist chocolate cake. You won't burn the cake as it's not baked and yeah , let's do this !

The ingredients :


  • Margarine : 250g (1 cup) 
  • Evaporated Milk :1 cup
  • Vinegar : 1 spoon
  • Flour : 1 1/4 cup
  • Cocoa Powder : 3/4 cup 
  • Baking Powder : 2 teaspoon 
  • Brown Sugar (1 cup) + Castor Sugar (1 cup) , or you can use normal sugar as substitute
  • Eggs : 4 medium sized
  • Vanilla essence : 1 teaspoon 
  • Sweetened Creamer , for taste 






How to :





  1. Prepare the margarine and yogurt first. Melt the margarine in the pan .  Mix the evaporated milk with the vinegar and let them turn into a cup of yogurt. Add more vinegar accordingly :)
  2. Filter/sieve the flour , together with the cocoa powder and baking powder. 
  3. Whisk the eggs with the sugar until they're blended well together. You can use a beater okay. Don't get yourself too worn out. 
  4. Slowly and only some at a time, pour the mixed flour into the eggs and sugar.
  5. Now that the flour is well mixed, pour some of the melted margarine (then mix) , and pour some of the yogurt (then mix). Do it till you finish both ingredients. 
  6. If you have sweet tooth, add the condensed milk accordingly :) I usually add a spoonful or two. Hehe.
  7. Pour the mixture into the tray/cupcake holder. Make sure to layer it with butter/margarine first okay ! You don't wanna waste any to the tray :P
  8. Steam it in the steamer for about an hour. Use the toothpick to check if it's cooked or not. If the cake mixture is glued to the stick, it's still not ready. 

As for the toppings, 

You can use the double boiling method. 

For a cake this size, I used around 75-90 g of cooking chocolate bar and a spoon of margarine (just a little bit, not really a spoonful). 
And since we have walnuts, so yeah , I sprinkles some crushed walnuts on top. (If you have almonds/walnuts, can blend them and add into the 'ingredients for cake' to make a Walnut Chocolate Cake haha)

Resepi Pavlova

Alkisah dari semalam lagi dok meroyan dekat mak nak buat pavlova. Tapi siang ikut mak keluar pergi settlekan hal. Ingat lepas berbuka, nak start buat (gigih gila !) hahaha. Lepastu mak cakap ,

"Sape nak makan ? Tolongah buat esok. Tolonglah."  
*please jangan baca dengan nada merayu. Mak memang selalu pakai 'tolonglah' even tak merayu hahaha.

So today, here I am. Fulfilling my PMS craving. Kalau dah nak something sweet, apa pun sanggup T_T


Ikutkan hati, naaaaak je skip house chores harini. Betapa semangatnya. Lol. Geram sebab bahan dah dok ada dalam peti. Bukak peti dok nampak lemon dengan strawberi dok menyengih je kat situ
-____-. Geram betul.


Pavlova ni senang gila nak buat sebab bahan dia sikit cenonet. Tak macam chocolate cake yang nak kena ada cocoa powder bagai. Pffttt .




So for meringue, korang just perlukan :

  • 4 biji putih telur
  • 1 sudu besar tepung jagung
  • 3/4 cawan caster sugar 
  • 1 sudu teh esen vanila
  • 1 sudu teh cuka
  • Buah


For topping , whipping cream je dah cukup. Make sure beli yang dah ready to whip topping. Tak payah dah nak kena rajin tambah icing sugar ke apa. Haha .




Precautions : Putih telur SAHAJA . Jangan ada sikiiiit pun kuning telur . Sebab kuning telur will react as emulsifier. And, make sure mixer korang bersih & suci dari minyak mahupun najis mughollazoh. Ekekekek









Procedures : 

First of all, dengan menggunakan mixer , pukul kesemua 4 putih telur yang dah selamat diasingkan dengan jayanya. Pukul sampai laaa berbuih fluffy macam ni. 







Then, masukkan gula SIKIT DEMI SIKIT. Jangan nak gelojoh tuang semua. Nanti crack korang punya pavlova . Masuk sikit, pukul. Masuk sikit, pukul. Until habis 3/4 cawan caster sugar tadi.
Pukul sampai berkilat. Serious berkilat haha. Buat sampai kalau tonggeng bowl atas kepala pun, tak tumpah meringue korang. Lol.


kalau still meleleh camni, jangan stop. Teruskan je lagi. 

dah terbalikan pun tak jatuh. Haaa. Baru boleh stop pukul.
Gambar kabur sebab tangan terketar dok ambik gambar hahahaha. 


Then, campak je the rest of bahan2 meringue tadi.
1 sudu besar tepung jangung, 1 teaspoon cuka, 1 teaspoon esen vanilla.  And, 1 teaspoon lemon juice (optional. kalau tak letak pun, jadi jugak pavlova tu). Fold dengan spatula sambil berangan join  master chef. Haha.


Then, dah boleh start panaskan oven dengan 150C selama 15 minit. Depends on oven. Kalau jenis panas tu, slow down sikit temperature tu.



Tips bakar meringue : Tempoh nak bakar tu ikut saiz meringue korang. Kalau jenis sebesar pinggan tu, set dalam 1 jam 15 minit. Tapi kalau nak buat sebesar piring je, dalam 30-35 minit, dah cukup dah. Lagi kecik meringue, lagi sekejap timing dia. Haa camtu. Pandai2 lah survive noh.





Then ambik loyang , lapik baking paper, tuang meringue korang atas baking paper. Kalau takda baking paper, pakai aluminium foil pun boleh. Colet2 marjerin sikit atas tu tak nak bagi melekat.

Ada orang, dia lukis siap2, saiz nak sebesar mana. Iollas yang pemalas ini main campak je atas foil tu. Lagi, ada orang pakai piping bag masa nak letak meringue tu. Meh. Iolls campak je. Haha. Macam taik lembu pun ada. Tak senonoh.


Ni saiz dalam sebesar piring.

Patutnya kat tengah tu tak bertanduk hahahaha pemalas gila.
Make sure kawahkan kat tengah, so that senang nak letak topping.
Jangan ikut bertanduk pulak.


Before masukkan dalam oven, turunkan suhu kepada 140C. Again, depends on oven lah.  

Sambil tunggu masak, pukul whipping cream. Jangan tuang sekali gus T_T . Ingatkan tadi buat sekali gus jadi cepat daripada biasa. Rupanya lama jugak. So tuang sikit, pukul sampai kental and jadi creamy, tuang sikit lagi, pukul. Take your time :p . 

And oh, meh nak share secret sikit. Muehehehe. Kalau rasa macam nak bagi manis lagi ( gila punya sweet-tooth tegar) , letak dalam 1 sudu besar susu pekat. Kalau rasa semua benda dah cukup manis, tak letak pun dah sedap gila dah. Haha lol. 



Wewwww. 


Dah siap, jangan keluarkan dari oven terus. Bukak je dulu bagi dia cool down. Biar dalam a few minutes before korang start letak topping. 





Okay disebabkan Anis ini seorang yang agak gigih, so dia ambik segelas mango juice dari peti , gula 1 sudu besar, and gi boil kat atas dapur. Naaaak jugak buat puree even mango takda. Haha. 



Ni saja gedik nak experiment. Kalau korang dah ada mangga, kupas isi mangga tu, then blenderkan je. Lepas tu boleh tuang atas topping tu. Or, pakai kiwi pun boleh. Ya Allah lagi sedap T_T. 
Kalau nak lagi proper, stim lah dulu mangga tu lepas kupas. Lepas dah tender, penyet pakai garfu/sudu. Tu khas bagi yang gigih sahaja. Bagi yang pemalas dan tahu menggunakan kebaikan teknologi, blenderlah. Haha. 



Lepas tu slice strawberry / kiwi / berries / pineapples / whatnots yang korang rasa sedap. Kalau boleh, yang masam2 la sebab meringue dengan topping tu dah manis. Tambah2 yang tambah susu pekat dalam whipping cream tadi pulak . Pehhhh !

Haaaa kalau pakai pisang (rumah ceq takda pisang pulak hari ni) , tak nak bagi pisang tu tukar warna, lepas slice, rendam dalam lemon juice sekejap. Then boleh atur atas topping. 



Nah pavlova with mango puree kecik cenonet layer 2 tingkat gittew. 


kalau rajin, pleaselah slice strawberry tu proper sikit.
Jangan buat tak senonoh macam ni, main letak je haha.
Ni kalau setakat nak makan sensorang, bolehlah. 







btw, baru sedar yang ni baru third time post under category 'resepi'. Memang takda maknanya lah tiap kali pergi dapur nak bawak phone hahaha. Ni pun sebab tadi teringat . Lol.
